Slow Cooker Pork and Sauerkraut

Slow Cooker Pork and Sauerkraut is full of flavor. Slow cooked for 10 hours for fork tender pork that is delicious!

1 boneless pork shoulder roast (3 to 4 lbs), trim excess fat
1 onion, thinly sliced
1 (2 pound) bag refrigerated sauerkraut
1 red apple, peeled, cored and diced
1 (12 ounce) bottle full-bodied beer
1 tablespoon brown sugar
1 tablespoon red wine vinegar
1 (14 ounce) can whole-berry cranberry sauce
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions

Spray slow cooker bowl with nonstick cooking spray.

Season the pork with salt and pepper. Brown in a skillet on all sides then place in slow cooker.

Add onion, sauerkraut and apple. In mixing bowl blend beer, brown sugar, and vinegar. Pour over pork.

Cover and cook on LOW for 10 hours.

Remove pork from slow cooker. Remove vegetables with a slotted spoon and place on serving platter.

Strain liquid into a bowl. Skim excess fat.

Microwave the cranberry sauce in a glass bowl for 1 minute.

Slice pork and serve over sauerkraut. Drizzle with some of the cooking liquid. Top with cranberry sauce.
